Lactation Cookies to Boost Milk Supply

Here is the recipe I use to make some super yummy cookies that contain ingredients like oats, brewer’s yeast and almonds (which are foods that increase milk production). But, rest assured, these healthy treats are great for anyone, not just nursing mothers. And NO, Dads won’t start lactating if they eat them! Of course, Mamas that have an overabundant supply of milk would want to avoid these. I think I got the original recipe from eHow.com-

Since I like to make a few different flavors (chocolate chunk, raisin and craisin), I broke it down into a half batch that makes about 2 dozen. The original (full) batch made about 4 dozen, and you can easily double that and freeze them (about 8 dozen). I am also gonna try adding pomegranite seeds one time soon!

Instructions:

Flaxseed meal: 1TBSP; 2TBSP; 4TBSP

Water: 2TBSP; 4TBSP; 8TBSP

** mix the flaxseed meal and water, let sit 3-5 minutes

Butter: 1/2 cup; 1 cup; 2 cups

Sugar: 1/2 cup; 1 cup; 2 cups

Brown Sugar: 1/2 cup; 1 cup; 2 cups

**Cream butter and sugar

Large Egg: 1; 2; 4

**add to butter/sugar mix

Vanilla: 1/2tsp; 1tsp; 2tsp

**stir flaxseed mix into butter mix and add vanilla, beat until well blended

IN A SEPERATE BOWL COMBINE:

AP Flour: 1/2 cup; 1 cup; 2 cups

Whole Wheat Flour: 1/2 cup; 1 cup; 2 cups

Baking Soda: 1/2tsp; 1tsp; 2tsp

Salt: 1/2tsp; 1tsp; 2tsp

Brewer’s Yeast: 1TBSP; 2TBSP; 4TBSP

** mix dry ingredients with butter mixture

STIR IN:

Old Fashioned Rolled Oats (not quick cook)or steel cut oats: 1 1/2 cups; 3 cups; 6 cups

Raisins/Craisins/Chocolate or Dark Chocolate chunks: 1/2cup; 1cup; 2cups

Slivered Almonds: 1/4cup; 1/2cup; 1 cup

PREHEAT OVEN TO 375 WHILE YOU SCOOP COOKIES ONTO GREASED BAKING SHEET USING A MEASURING SCOOP

BAKE 10-12 MINUTES
